2 cups all-purpose flour
1 cup confectioners' sugar
1 cup melted butter

Topping:
4 eggs
2 cups white sugar
1 Tsp baking powder
1/4 cup all-purpose flour
1/2 cup lemon juice

Finishing touch:
1/2 cup sweetened coconut.

Directions:
Directions:
Preheat oven to 350ºF. Grease a 9 x 13 cake pan with softened butter.

Prepare the crust:
Mix the flour and sugar together and then stir in the butter. Press into the bottom of the pan creating an even surface. Bake for 15-20 minutes at 350ºF or until the crust is a light golden brown.

While the crust is baking prepare the topping:
Mix the dry ingredients together until there are no lumps and set to the side. Beat the eggs until light. Slowly beat the dry ingredients into the eggs. When it is mixed then beat in the lemon juice.

Remove the finished crust from the oven and pour the wet mixture on top. Return to the oven and bake for an additional 30 minutes at 350ºF or until set.

Remove from the oven and sprinkle with 1/2 cup sweetened coconut.

Cool completely before cutting into bars.
