2 tbsp vegetable oil
1 lb boneless skinless chicken breasts ( cut into bite size cubes about 1 inch)
1/4 cup chopped onion
1 can cream of chicken soup
2 tbsp milk
1 tbsp dry sherry
1 cup fresh mushrooms, sliced
1 cup cooked broccoli florets
1/2 cup grated parmesan cheese
about 12 to 16 oz cooked pasta, such as spaghetti or ziti

In a 10 inch skillet over medium heat, in hot oil, cook chicken and onion until chicken is browned and onion is tender.
Stir in soup, milk, and sherry. Add mushrooms, broccoli and 1/2 cup of cheese. Reduce heat to low. Cover and cook 10 minutes, or until chicken is cooked through, stirring occasionally.
Serve over pasta. Top with additional cheese, if desired.
