3 (14 ounce) cans chicken broth
1 1/3 cups quick cooking grits
1/2 cup grated Parmesan
1/2 teaspoon salt
2 Tablespoons butter, melted
8 ounce package cream cheese, softened
1 Tablespoon half-n-half
1/2 cup grated Italian blend cheese
1 teaspoon chopped parsley
1/2 pound cooked, peeled deveined shrimp, chopped
1/2 cup grated cheddar

Preheat oven to 400º

Bring broth to a boil, stir in grits and return to a boil. Cover, reduce heat and simmer 5 minutes, stir in Parmesan and salt. Remove from heat. Spoon grits into a greased 9x13 inch baking pan. Cover and chill 2 hours. Unmold grits onto cutting board. Cut out 48 1 1/2 inch circles using round cookie cutter. Brush jelly roll pan with butter. Place grits on pan. Bake 15 minutes, turn and bake 45 minutes.

In a large bowl combine cream cheese and half-n-half, stir until smooth. Add Italian Blend Cheese shrimp and parsley. Top grits with mixture top with cheddar. Broil 5 minutes.
