3 pounds okra
1/4 cup vegetable oil
1/3 cup vegetable oil
1/3 cup flour
4 medium onions, chopped
4 teaspoons tomato paste
4 cups water
2 pounds shrimp, peeled and deveined
1 pint oysters
1 pound crabmeat
1 cup diced ham
3/4 cup chopped parsley
2 cloves garlic, finely chopped
3 bay leaves
1 cup celery, finely chopped
salt and pepper to taste

Directions:

Thinly slice okra and saute in 1/4 cup oil until thick; set aside. Combine 1/3 cup oil and flour in a heavy pot. Cook over medium heat, stirring constantly, until a rich brown roux is formed. Add onion, tomato paste and water; blend well. Add okra, shrimp, crabmeat and ham. Season with parsley, garlic, bay leaves, celery, salt and pepper. Simmer, uncovered about 1 hour.

Add oysters and hot sauce to taste and serve over rice.
