Cupcakes:
1/2 c. peanut butter
1/3 c. shortening
1 c. brown sugar
2 eggs, beaten
1 3/4 c. all purpose flour, sifted
1/2 tsp. salt
2 1/2 tsp. baking powder
3/4 c. milk
1 tsp. vanilla

Frosting:
1/2 c. peanut butter
1/4 c. butter or margarine
6 Tbsp. cold strong coffee
2 1/2 c. powdered sugar

Directions:
For cupcakes, preheat oven to 350º. Cream together shortening, brown sugar, and peanut butter. Add eggs, and vanilla. Mix well. Sift dry ingredients together. Add alternately with milk. Line cupcake pan with liners. Fill liners 1/2 full. Bake for 25 minutes. Cool completely before frosting. For frosting, cream peanut butter and butter or margarine. Add coffee and powdered sugar. Beat until fluffy.
