1/4 lb. spicy smoked sausage, diced
1/2 c. chopped sweet onion
1/2 c. chopped green bell pepper
2 garlic cloves, minced
3 c. fresh corn kernels
1 c. sliced fresh okra
1 c. peeled, seeded, and diced tomato (1/2 lb.)
Salt and fresh ground pepper to taste.

Saute sausage in a large cast iron skillet over medium-high heat 3 minutes or until browned. Add onion, bell pepper, and garlic, and saute 5 minutes or until tender. Add corn, okra, and tomato; cook, stirring often, 10 minutes. Season with salt and pepper to taste.

Note: use a spicy and hot smoked sausage

This is a great healthy summer meal in itself. It will bring memories of meals at Daddy Curtis' when the sisters would bring in the vegetables from the garden.

Using a spicy sausage brings out the flavor of the vegetables.

Serve in wide-rimmed bowls to hold sour-dough bread. Add butter with chives whipped in to spread on the bread for great flavor.
