1-2 eggplants, sliced
2-3 eggs
2 t. milk
Salt and pepper
Parmesan cheese
Mozzarella cheese
Oregano
Tomato sauce

Directions:
Directions:
Slice eggplant and dredge in eggs, milk, s&p, Parmesan cheese mixture. Spread in baking dish and top with mozzarella. Sprinkle with oregano, s&p, and Parmesan. Top with a large can of tomato sauce. Bake 25-30 minutes until cheese melts and dish cooks through.
