1/4 cup flour
1/4 tsp black pepper
½ tsp paprika
1 pound boneless, skinless chicken breasts
5 tsp corn oil
1/4 chicken broth
2 Tbsp lemon juice
2 Tbs capers, drained

Directions:
Directions:
* Combine flour, pepper, and paprika on a plate. Press chicken into mixture, coating evenly. Shake off excess.

* In heavy 10 inch skillet, heat corn oil on medium high heat for one minute. Add chicken and cook 3-5 minutes per side.

* Transfer chicken to a platter.

* Add chicken broth to skillet, scraping any brown bits on bottom. Stir in lemon juice and capers and heat.

* Pour sauce over chicken and serve.

This is a great recipe for a nice dinner. It is delicious, but a bit rich. I love the combination of the lemon and capers with the chicken. Yum!
