Banana Bread Recipe

1 cup mashed bananas (approx 3 bananas)
3/4 cup sugar
½ cup oil
2 eggs
1 3/4 cup sifted flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
Nuts, chocolate chips, raisins, dried cranberries (optional)

Directions:
Directions:
* In a bowl combine salt, flour, baking powder, and baking soda.

* In another bowl combine oil, eggs, and sugar. Beat vigorously until frothy. Add bananas and blend thoroughly. Fold in flour mixture until blended.

* Pour into greased bread pan.

* Bake at 325 degrees for one hour, until crust is golden brown. Use toothpick to test for doneness.

* Remove pan to rack and let cool for a least 10 minutes.

This recipe was given to me by a lady named Jean Degaetano. She was my Kindergarten teacher, and she also babysat Ashley and I when my mom and dad would go out of town. Every time she stayed with us we always made this banana bread. I remember how much fun it was to squash up the bananas and watch her mix everything together. She always would tell us stories while we were making the bread. She usually put nuts in the bread, but I have been putting chocolate chips or raisins in it since I have started making it. It is also great just by itself. I hope you enjoy it.
