1 1/2 cups vegetable oil
2 cups sugar
4 large eggs
2 cups all-purpose flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 cups grated carrot
1 (8 3/4 oz.) can crushed pineapple, drained
1/2 cup chopped pecans


Cream Cheese Frosting:

1 cup butter or margarine - softened (I use unsalted butter)
1 (8oz.) package cream cheese - softened
1 (16 oz.) package powdered sugar - sifted
1 tsp. vanilla

Grease bottom and sides of 3 (9 inch) round cakepans, then flour. Beat first 3 ingredients at medium speed with electric mixer until blended. Combine the next 4 ingredients and add to oil mixture at low speed until blended. Stir in carrots, pineapple, and pecans. Pour batter into prepared pans. Bake at 350º for 25 minutes or until wooden pick comes out clean. Cool pans on wire racks for 10 minutes. Remove from pans. Cool completely. Spread Cream Cheese Frosting on layers.

Cream Cheese Frosting Directions:
Combine Butter and Cream Cheese and beat at medium speed until well creamed. Blend in Vanilla and Powdered Sugar until well blended.
