1 pork loin
1 tsp. pepper
1/2 tsp. celery salt
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. ground cloves
1 tsp. crushed red pepper
liquid smoke
1 Tbsp. Big Green Egg seasoning
couple dashes of hot sauce
1 qt. tomato juice
1 c. finely chopped onion
2 Tbsp. finely chopped green pepper
1/4 c. vinegar
4 Tbsp. brown sugar
4 Tbsp. Worcestershire sauce
2 tsp. ground mustard
1 Tbsp. chili powder
1 tsp. ground garlic
1 (6 oz.) can tomato paste
1 (18 oz.) bottle of Sweet Baby Rays (Honey BBQ)

Place loin on large piece of foil. Combine first 6 ingredients and sprinkle over loin. Pour 1 1/2 caps of liquid smoke over it. Cover with another piece of foil. Seal edges and place on cookie sheet and bake in 225-250º oven for approximately 3 hours. Meanwhile combine remaining ingredients, including first 6 and additional cap of liquid smoke; don’t add the bottle of Sweet Baby Rays (Honey BBQ), this will be added later. Bring to a boil, reduce heat and simmer for about an hour. Once pork is done remove from oven and let pork cool. After pork has cooled shred into small pieces. Combine BBQ sauce mixture with 1 (18 oz.) bottle of Sweet Baby Rays (Honey BBQ), mix well. Pour enough sauce over pork to coat well adding 1/4 cup of water or so if needed. Heat through. Serve with buns and baked beans.
