Ready mixed Boxed Cornmeal (much easier than making your own although you can.
1 28 oz cn Kidney Beans
2 lbs lean ground beef/turkey--leanest possible
1 large chopped onion
1 large cn chopped green chilies
1 cn ripe olives pitted
1 chopped green pepper
1 28 oz cn chopped tomatoes
1 sm cn tomato sauce
1 cn corn (optional)
garlic to taste (I use a lot)
2 tsp sugar
1 3/4 salt
2 T chili powder (Again, to taste, I use a lot more
1 lb. shredded cheese - 5 Mexican cheese combination

Follow directions to make cornmeal bread but do not bake. Fry meat and onion, garlic, green peppers, and chili powder until cooked. Add beans, tomatoes, tomato sauce, olives to mixture. Grease casserole dish. Add 1/2 mixture, sprinkle cheese, rest of mixture, layer cheese, layer green chilies and layer of cornmeal mixture. Bake 45 minutes at 350º.

Goes well with a nice green salad. The cornmeal topping serves as the bread. As you cook this, give it a taste test and add what ever you would like. You can make this as hot as you would like by adding Tabasco or chilies, the sugar helps take the acidity out of the tomatoes.
