1 1/2 c. milk
pinch of salt
5 TB sugar
1 TB butter, melted
1 tsp. vanilla
5 eggs, beaten
2 c. cooked long-grain rice
1 TB fresh lemon juice (opt)
Cinnamon for topping

Directions:
Directions:
Mix all ingredients except the rice, lemon juice, and cinnamon. Mix them well and then add rice and juice. Sprinkle cinnamon on top. Place in 8 x 10 greased baking dish and bake 30 minutes at 350º. Serve with milk and sugar.
