1-2 lbs. White Fish Fillets (Stripper, Cod, Haddock
Fluke)
2 TBS. olive oil
1 med. onion, chopped
1 (15 oz.) can Hunt's tomato sauce
3 cloves of fresh garlic minced
12 pitted kalamata olives
1 TBS. capers, drained
2 TBS. fresh parsley
2 ribs of finely chopped celery
dash of s&p (olives and capers salty) taste first
Parmesan cheese for sprinkling (optional)

Place fish in a single layer in a well oiled oven baking dish. Heat olive oil in fry pan and saute the onions gently until soft and slightly golden. Add tomato sauce, and garlic. Cook over medium heat stirring often for five minutes. Stir in olives, capers, parsley and celery and spoon sauce over the fish and cover well. Cover with foil and bake 375 degrees for 25 minutes. Sprinkle with Parmesan cheese (optional)

This is an extremely delicious fish, even if you don't like fish. Can also be served ontop of swordfish. I like it sprinkled with the cheese, adds a little zip.
