18 wooden skewers
1 large clove garlic
1 1/2 c. fresh parsley leaves
1 tsp. Caribbean jerk seasoning
1 1/2 c. fresh cilantro leaves
1/4 tsp. salt
1/3 c. canola oil
18 large shrimp (about 12 oz), peeled & deveined
1 scallion, chopped
4 tsp. lime juice
1 (20 oz.) can pineapple chunks

1. Soak skewers in water for 15 mins. Position broiler rack so that top of shrimp on pan will be 4” from heat source. Preheat broiler. Line jellyroll pan with foil and coat with cooking spray.
2. In food processor combine parsley, cilantro, oil, 3 tsp. lime juice, scallion, garlic, 1/4 tsp. jerk seasoning and salt. Process until finely chopped. Reserve.
3. In bowl, combine remaining lime juice and seasoning. Add shrimp; toss to coat. Thread each skewer with shrimp and pineapple. Place on pan. Broil until shrimp are opaque. About 6 mins. Serve with reserved sauce.
