To Poach The Fish:
1 lb. cod fillets
1/4 teaspoon black peppercorns
1 small onion, peeled and sliced
1 cup milk

To Make The Fish Cakes:
1 lb. cod fillets, poached
2 medium-sized russet potatoes
1 cup bread crumbs
1/4 cup chopped fresh parsley
2 Tbsp. grated Parmesan cheese
2 cloves garlic, finely chopped
1/2 tsp. pepper
1 tsp. salt
2 eggs, lightly beaten
Canola oil, for frying
Tartar Sauce

Directions:

Boil and mash potatoes, set aside. Poach the cod until it flakes easily. Drain and flake the fish with a fork. Be sure to remove bones. Combine the flaked fish, potatoes and remaining ingredients; mix well. If the mixture is too crumbly, add a bit of the poaching liquid. If too sticky, add a bit more bread crumbs. Form the mixture into cakes and fry on medium high heat in a skillet coated with oil. Fry until golden on one side, turn and continue to cook until 2nd side is golden brown. Serve hot with Tartar Sauce. Serves 4-6.
