1/4 c. margarine or butter
1 c. sugar
1 egg
3 large ripe bananas, smashed
1 tsp. vanilla
1 1/2 c. flour (if using self rising omit baking powder and salt)
1 tsp. baking powder
1/4 tsp. salt

Carmel icing:
2 Tbsp. margarine or butter
1/4 c. packed brown sugar
1 Tbsp. milk
1/2 c. powdered sugar

Directions:
Directions:
Preheat oven to 350º. Cream margarine and sugar. Add egg and beat well. Add bananas and vanilla, mix well. Add dry ingredients, mix well. Fill paper lined muffin pans 3/4 of the way full. Bake for 20-23 minutes or until tooth pick test clean. Remove from oven. Cool for about 5 minutes, remove from pan and place on a cooling rack. Cool completely before icing.

Carmel frosting:
In a small sauce pan, melt margarine. Stir in brown sugar and milk, bring to boil. Cool slightly . Stir in powered sugar, stir until smooth. Put mixture in a plastic baggie, cut a corner off the bag and drizzle frosting over the muffins.
