1 c. warm milk (110ºF)
1/3 c. margarine, melted
4 1/2 c. bread flour
1 tsp. salt
1/2 c. white sugar
2 1/2 tsp. bread machine yeast


1 c. brown sugar, packed
2 1/2 T. cinnamon
1/3 c. butter, softened

3 oz. cream cheese, softened
1/4 c. butter, softened
1 1/2 c. powdered sugar
1/2 tsp. vanilla
1/8 tsp. salt

1. Dissolve the sugar in the milk then add the yeast. Let that get foamy on the top, then add the salt, eggs and oil. Use a regular mixer to mix that mixture in with the flour a little at a time. Then, switch to a bread hook to continue kneading. When it is mixed well enough, finish kneading by hand. Use butter flavored cooking spray instead of flour to keep from sticking.

2. To let it rise - heat the oven to 200º and then TURN IT OFF. COVER the dough with a moist paper towel over the bowl and put in the oven for around 1 hr. After the dough has doubled in size, turn it out onto a lightly floured surface, cover and let rest for 10 mins. In a small bowl, combine butter, brown sugar and cinnamon.

3. Roll dough into a 16x21-inch rectangle. Spread dough with sugar/cinnamon mixture. Roll up dough; cut into 12 rolls. Place rolls in a lightly greased 9x13 pan that is lined with parchment paper. Cover and let rise until nearly doubled, about 30 mins. Meanwhile, preheat oven to 400º.

4. Bake rolls in preheated oven until golden brown, about 15 mins. (maybe a little longer). While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla and salt. Flip the rolls upside immediately after coming out of the oven or they will stick. Spread frosting on warm rolls before serving.

Make these to the point where they are placed in the baking dish, then cover them with plastic wrap and put them in the refrigerator for the night. The next day, they go straight into a COLD oven (minus the plastic wrap!). Turn up the heat to 350º and bake for 25-30 mins.

The unbaked rolls freeze well: the night before you want to bake them, put the pan into the fridge. In the morning, they're ready for the oven.
