1 lb. ground beef
1 large onion, chopped
1 bell pepper, chopped
1 can stewed tomatoes
1 can Ranch Style beans** (see note)
salt/pepper to taste
1 t dried parsley

Brown beef, onion and bell pepper in a skillet. Drain the grease. Add everything else (may need to transfer to a larger pot). Just let it simmer for an hour or so, then it's ready to eat.

This is Clay's mom's recipe, it is a family favorite. Good served with bread and a salad. **Sometimes the Ranch Style beans add too much of a "Mexican" flavor. Many times I just use plain canned pinto beans (or pinto beans with jalapeno) instead.
