1 1/4 lbs. chicken breasts, cut into chunks
1 t paprika
1 t salt
1/4 t pepper
2 t olive oil
1 chopped medium onion
1 chopped green pepper
1 or 2 minced garlic cloves
1 can Ro-Tel tomatoes
1 1/2 c INSTANT rice
1 can chicken broth
3 or 4 slices Velveeta cheese OR 1 c shredded cheese

Directions:
Directions:
Sprinkle chicken with paprika, salt and pepper. Heat oil, cook chicken for 2 minutes, then add onion, pepper and garlic, cook until done. Drain tomatoes, reserving liquid. Add broth to tomato liquid to equal 1 1/2 cups. Add liquid to skillet mixture and bring to a boil. Stir in rice and tomatoes. Add cheese on top, cover and set aside for 10 minutes. After 10 minutes, stir everything together.
