1 stick butter
1 small onion, chopped
2 cans cream corn
1 small bell pepper, chopped
1 small jar pimento
1 egg
1/2 t salt
1/4 t pepper
1 egg
1 1/2 cups Minute Rice
1/2 c chicken broth
grated cheddar cheese

Directions:
Directions:
Preheat oven to 350º. Grease a 9x13 pan. Brown bell pepper and onion in skillet with the stick of butter. Add the rest of the ingredients, except the cheese. Pour into a baking dish. Let cook 30-40 mins. (or until rice is done), then sprinkle grated cheese on top and cook another 5 minutes.

**Sometimes I'll add fresh minced garlic to it, which I add to the onion/bell pepper mixture to saute in the skillet. I've also chopped fresh jalapeno to the onion/bell pepper mixture, too.
