5 pounds of potatoes
4 1/2 cups of mayonnaise
2 1/2 tablespoons white vinegar
2 1/2 tablespoons yellow mustard
2 1/2 teaspoons salt ( I use less salt)
3/4 teaspoon pepper ( I add a little more pepper)
1 onion ( I use a red onion)
10 hard boiled eggs

Directions:
Directions:
1.  Heat a pot of water until boiling.  Add potatoes and cook for 30-35 minutes or until potatoes are tender.  Drain and cool slightly.  Cut into cubes.
2. Mix mayonnaise, vinegar, mustard, salt and pepper in a large bowl.  Slice eggs into cubes.  Add potatoes, onion and eggs into bowl and stir all ingredients together.  ( I mix paprika in at this point for coloring).
3.  Cover and refrigerate.
(For smaller portions, cut recipe in half)
