2 cups flour
1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
3/4 cup oil
2 eggs
1 cup sugar
2 cups apples-peeled and sliced
1 cup chopped nuts
1 tsp vanilla
1/3 cup brandy (optional)

Directions:
Directions:
Sift together flour, salt, nutmeg, cinnamon, and baking soda in bowl. In a separate bowl, mix oil, eggs and sugar. Add flour mixture to oil mixture and mix well Add apples, nuts, vanilla and brandy. Mix again. Batter will be very stiff like cookie dough--spread into lightly greased bundt pan. Bake at 350 degrees for 35 to 40 minutes. This is a rich cake and should not be iced. The crust will be crunchy and the inside chewy like a brownie. Dust with powdered sugar, if desired.
