4 boneless chicken breasts, cut in half lengthwise
Dipping Sauce - 2 slightly beaten egg whites, 2 tsp. cornstarch, juice of 1/2 lemon or 1 1/2 Tbls. lemon juice
Crumb Coating- 1 1/2 c. course bread crumbs, 1 tsp kosher salt, 1/2 tsp. pepper, 2 Tbls. chopped fresh parsley, 1 tsp sage, zest of whole lemon minced

Preheat oven to 450º. Bread the chicken, first by dipping in lightly whipped dipping mixture and then dipping in crumb mixture. Let sit on rack for 30 min to allow the crumb mixture to harden. In 2 skillets add olive oil. Saute chicken on one side. Gently turn with a large spatula and saute slightly. Transfer to 13" x(" glass pans that have been sprayed with Pam. Place in oven on middle rack for approximately 8 min. until they test at 165º
