Soft shell crabs - allow 3 per adult
1 egg beaten
1 cup milk
3/4 cup crab meat
1/4 cup flour
Dash of salt
Oil for frying
1 lemon
Cucumber Tartar Sauce:
1 small cucumber (peeled and shredded)
1/4 cup mayonnaise
1 tsp. snipped fresh parsley
1 tsp. cider vinegar
1 tsp. Dijon mustard

Directions:
Directions:
Mix egg and milk. Mix meal, flour and salt. First dip crabs in milk mixture then in meal mixture. Set on waxed paper until all are ready. In a heavy skillet, add oil up to 1 inch deep. Heat on moderately high. Add crabs - do not crowd. Fry until golden brown on each side. Watch closely, they fry very fast. Drain on paper towels. Serve alone or on a bun with tartar sauce and lemon wedges.

Tartar Sauce:
Pat cucumber dry with paper towels. Place cucumber in small bowl with mayonnaise, parsley, vinegar, and mustard. Refrigerate until ready to use. Makes about 2/3 cup.
