1-2 lbs. soft cut of beef or pork (tenderloin works great)
1/4 cup soy sauce
1/8 cup sesame oil
1/8 cup sugar (can use brown or white or mixture)
3-4 cloves minced garlic
1 T. minced ginger
1/4 cup thinly sliced scallions
2 T. sesame seeds
Head of soft lettuce - red leaf, Boston, or Bibb
Fresh cooked Korean (short grain) or Jasmine rice
Hot Sauce: Mix 2 T. hot chili sauce (like Sriracha), 4 tsp. honey, and 2 tsp. sesame oil

Wrap beef or pork in plastic wrap and partially freeze, then slice as thin as possible. Marinate meat in soy sauce, sesame oil, sugar, garlic, ginger, and scallions in the refrigerator as long as possible (one to several hours or overnight is fine). Grill on punctured foil on an outside grill, broil, or stir fry in vegetable oil in a large skillet, turning meat once. For each serving: spoon rice into lettuce leaf; add meat mixture; sprinkle with sesame seeds. You may choose to season with a hot sauce prior to rolling up.
