3 1/2 to 4 lbs. beef short ribs
1 1/4 cups beef stock or 1 can condensed beef broth.
1/3 cup all purpose flour
3 tablespoons soft butter or margarine
1 clove garlic (finely chopped)
1/4 cup sherry (optional)
1/4 teaspoon Accent
salt and freshly ground black pepper to taste

Brown ribs in a shallow pan in an extremely hot oven (550º) for 15 minutes. Pour off fat.Lower oven to 350º, add beef stock to ribs and cover with foil. Cook about 1 1/2 hours or until meat is tender. Skim off fat and discard. Reserve broth to use in gravy. Keep ribs in oven while making gravy. For gravy: Brown flour slowly in a skillet, mix with soft butter to make a paste. Stir paste in reserved broth, cook over medium heat, stirring constantly until gravy thickens. stir in garlic, sherry and Accent. Season to taste with salt and pepper. combine gravy and ribs. Return to oven, cook gently about 15 minutes.
