1 cup julienned sun-dried tomatoes (not in oil)
1 cup boiling water
8 boneless chicken breasts
3 T. fresh oregano, chopped & divided
50 kalamata olives, finely chopped
1/3 cup fresh parsley, chopped
1/2 tsp. crushed red pepper flakes
1/2 tsp. salt
1/4 cup olive oil
4 oz. Feta cheese, crumbled

Sprinkle 1/2 oregano over chicken. Grill until done. Meanwhile, combine tomatoes & water. Let stand for 10 minutes; drain. Stir olives, parsley, remaining oregano, red pepper, salt, and oil into tomatoes. Fold in Feta. Stir tomato mixture in pan about 1 minute, just until warm. Serve with orzo.
