1 medium onion, chopped
5 cloves garlic, minced
1 can (14 1/2 oz.) vegetable broth
1 T. fresh rosemary, chopped (dried rosemary, use 1 tsp.)
1 can (14 oz.) artichoke hearts, drained, coarsely chopped
1 package (10 oz.) frozen chopped spinach, thawed and drained
1 jar (16 oz.) Alfredo pasta sauce
1 tsp. black pepper
9 uncooked lasagna noodles
3 cups (12 oz.) Mozzarella cheese, shredded
1 cup (4 oz.) Feta cheese, crumbled

Heat oven to 350 degrees. Spray rectangular baking dish, 13x9 x2 inches, with cooking spray. Heat 2 T. olive oil over medium heat in a very deep skillet. Saute garlic and onion for 3 minutes until onion is slightly tender. Add broth and rosemary. Heat to boiling. Stir in artichokes and spinach; reduce heat. Cover and simmer 5 minutes. Stir in pasta sauce and pepper. Spread 1/4 of mixture in bottom of baking dish. Top with 3 noodles. Sprinkle 3/4 cup Mozzarella. Add 2 more layers in this order ending with Mozzarella. Top with Feta cheese sprinkled on top. Cover dish with foil and bake 40 minutes. Uncover and bake an additional 15 minutes. Remove from oven and let sit for 5 minutes. Cut lasagna in squares and serve while hot. Makes 8 servings.
