2 Chicken breasts
1 Monterey pepper
1 Poblano pepper
1 large Vidalia onion
1 tbsp canola oil
1/2 tbsp light olive oil
2 tsp soy sauce
1/4 c salsa
1/4 c sour cream or Greek yogurt
1/2 c shredded cheddar cheese
4 large 10" flour tortillas
salt and pepper to taste

Season chicken with salt and pepper.
Dice onion.
Clean and dice peppers.

In medium saute pan with 1/2 tsbp canola oil and olive oil saute onions over medium heat until transparent. Add peppers cooking for about 3 minutes or until tender. Add soy sauce to pan and stir simmering for 1 minute. Remove from heat and set aside.

Heat 1/2 tbsp canola oil in saute pan over medium heat, add chicken. Cook 3 minutes per side or until done. Cool for 2 minutes, slice length wise into 1/4" strips.

(To make things easy, I place teaspoons in the jar of salsa, and the container of yogurt or sour cream.)

Over each open tortilla, spread down the middle 1 tsp sour cream or yogurt and 2 tsp salsa. Then place 1/2 chicken breast, topped with 2 tbsp onion/pepper mixture, top with 1/8 cup cheese. Fold 1/2 tortilla over mixture, pulling mixture back towards you and roll so edge is up, secure with toothpick. Place on a microwavable platter.
Continue with remaining tortillas. Heat in microwave for 1.5 minutes. *Serve with your favorite side dish. I use red or black beans and rice. You may find them in the grocery aisle at your favorite supermarket. (Follow directions on package.)
