1 ripe mango, diced (1 1/2 cup)
1/4 cup red onion, finely chopped
1 T. fresh cilantro, finely chopped (parsley or basil can be substituted)
1 T. lime juice
1 T. olive oil
1 tsp. cider vinegar or red wine vinegar
Dash of pepper (use red pepper if you want a zing to it)
Dash of cumin (optional)

Directions:
Directions:
Combine the first 3 ingredients in a bowl. For the dressing, combine the remaining ingredients and pour over the salsa mix. Serve with any type of crackers, pita chips, or use as a topping over chicken, fish or bean burger.
Makes 4 servings.
