2 c all purpose flour - you could exchange 1 c for whole wheat
1/2 c sugar
1/2 tsp salt
1 tbsp baking powder
1 1/2 c fruit (cut up apple, banana, strawberry, prune, blueberry, raspberry - use one kind or mix them up)
1 c sour cream or yogurt or milk
1/4 c (1/2 stick) butter, melted
2 eggs

Preheat oven to 500º (you will turn it down when you put the muffins in the oven - starting out with a very hot oven will improve the top crust)

Grease 12 c muffin pan.

Blend all the dry ingredients until well mixed - using 1 c whole wheat flour will help you tell when it is well mixed. Add the fruit and gently toss until coated with flour mixture.

In a separate bowl beat the liquid ingredients - dairy, melted butter and eggs - until light.

Pour the wet ingredients into the dry. Using a fork count 20 stirs and stop. Batter will be lumpy - do not stir more than 20 times no matter what it looks like - this will ensure tender muffins.

Fill each muffin cup 2/3 full.

Put muffins in oven, and turn down the temperature to 400º. Bake for 20 minutes or until golden brown.
