1 pkg. lemon cake mix
1 (#2) can of crushed pineapple
1/2 c. milk
1 (3 oz.) pkg. instant vanilla pudding
1 (9 oz.) pkg. Cool Whip.

Directions:
Directions:
Prepare and bake according to package directions. Poke holes in cake with a fork as soon as it comes out of the oven. Spread crushed pineapple with juice over warm cake. Cool completely.

Mix: milk and instant vanilla pudding. Fold in 1 (9 oz.) pkg. Cool Whip. Spread on the cake. Top with toasted coconut (optional). Keep refrigerated.
