3 eggs
1 TB sugar
½ tsp. salt
1 ½ c. milk
1 c. unbleached flour
¼ c. mineral water
butter

Directions:
Directions:
Whip eggs thoroughly with sugar and salt. Add milk and flour, then mineral water. The mixture should have the consistency of heavy cream so it will be easy to flip. Pour batter (1/4 cup) into large buttered skillet and rotate pan to make a think pancake (ala crepes). Flip when golden brown.
Serve with butter and jam.
