2 c. vinegar
2 c. water
2 1/2 c. sugar or a bit less
1 tbsp. pickling spice
Pinch of pickling salt (1 1/2 tsp.)

Directions:
Directions:
Combine all of the above ingredients in a pot and bring to a boil for 5 mins. Fill sterilized jars with sliced or cut up precooked beets. Pour boiling liquid over beets until jar is filled. Wipe rims. Seal.
