Hot Cross Buns Recipe

1 2/3 c. warm water
2/3 c. butter
2 tbsp. powdered milk
1/2 c. white sugar
3/4 tsp. salt
2 eggs
2 egg whites
6 c. all purpose flour
2 tbsp. active dry yeast
1 2/3 c. dried currants or raisins
6 tsp. cinnamon

For Brushing Buns:
2 egg yolk
4 tbsp. water

For Icing:
1 c. icing sugar
1/2 tsp. vanilla
4 tsp. milk

Directions:
Put warm water, butter, milk powder, 1/2 c .sugar, egg, egg white, flour and yeast into a large mixing bowl (Bosch machine).
Knead, when almost complete add currants & cinnamon, mix. When mixed remove to a greased bowl, cover and let it double in size.
When doubled, punch down, cover and let rest for another 10 mins.
After 10 mins., shape into approx. 24 balls and place on 2 9x12 greased pans. Cover and let rise until double (35 - 40 mins).
Brush buns with yolk and water mixture. Bake buns at 375ºF for 20 mins. Remove from pan and cool on rack.
To make crosses, mix icing sugar, vanilla & milk. Put into an icing bag and make a cross on each bun after it has cooled or buy icing in a tube and place on buns just prior to serving.
