1 lb. ground beef
2 eggs
pinch of salt
4 T. Parmesan cheese
4-5 slices of day old bread (soaked in white wine; then squeeze out excess wine)
3 T. breadcrumbs
fresh Mozzarella cheese
bread crumbs
olive oil
A few chopped cherry tomatoes
white wine

Directions:

Mix in a bowl the meat, eggs, bread, Parmesan cheese and salt. Mix with your hands until well mixed. Take some meat mixture in your hands; put 2 or 3 small pieces of the fresh mozzarella in the middle. Close the meat around the cheese and form into oblong balls. Roll the meatballs in breadcrumbs.
Layer olive oil in the bottom of a baking dish; place meatballs on top. You can add some chopped cherry tomatoes and salt. Cover with some white wine and bake them at 350 degrees for about an hour.

This recipe is from a cooking class that I attended at the Villa Ida in Sorrento, Italy. They cook with a lot of olive oil and white wine and only use fresh mozzarella cheese.
