2 c. chopped celery
1 c. chopped onion
1 cube butter
2 eggs, beaten
8-10 c. coarsely crumbled corn bread
1 t. poultry seasoning
2 slices white bread, toasted and torn into small pieces (may substitute pkg. seasoned bread crumbs)
5-6 c. turkey or chicken broth

Directions:
Directions:
Saute onion and celery in butter until transparent. Refrigerate overnight.

The next day, combine remaining ingredients, except broth, in large bowl. Add celery and onion to mixture. Mix well. Add enough broth until mixture is very wet.

Stuff and bake in turkey and/or bake in pan.

This recipe comes from Nathan's Great Grandma Anderson who is originally from Arkansas. This side of the family serves it with turkey at Thanksgiving and with ham at Christmas and Easter.
