1 lb red kidney beans, dry
3+ c water
1 clove garlic, chopped
1 rib celery, chopped
1 medium onion, chopped
1 lb smoked sausage
Creole/Cajun seasoning

Directions:
Directions:
Soak beans overnight and drain. Saute onion, celery and garlic in a little vegetable oil. Add beans, and water. Simmer 1-1/2 hours, adding more water as needed. DO NOT ADD SALT until beans are tender, season with salt and pepper or Creole/Cajun seasoning. Cut the sausage into bite sized pieces and add to beans, simmering 30 minutes more. Serve over cooked rice.
