2 Tbsp. red wine
1 Tbsp. Worcestershire sauce
1 Tbsp. tomato paste
1 Tbsp. red wine vinegar
1 Tbsp. (or to taste) prepared horseradish
2 tsp. fresh thyme leaves
2 cloves garlic, minced
1 (2 lb.) beef flank steak
Salt and pepper to taste
2 yellow bell peppers
Thyme sprigs for garnish

Directions:

Whisk all ingredients, except flank steak, in a small bowl until blended. Sprinkle meat on both sides with salt and pepper. Place in a glass container large enough to hold meat. Add the marinade. Cover with plastic wrap and marinate at room temperature 2 hours or in the refrigerator at least 4 hours, turning occasionally. Prepare grill. Grill peppers, turning as needed, until charred on all sides, 12-15 minutes. Wrap peppers in damp paper towels and let cool. Remove blackened skin, stems and seeds; cut into thick strips. Grill steak, basting occasionally with marinade, 6-8 minutes on each side for medium-rare. Transfer to cutting board and thinly slice on the diagonal. Arrange steak and peppers on a platter. Garnish with thyme sprigs. Serve at once.
