1/3 C. olive oil
Juice and zest of one lemon
3 cloves garlic, minced
3 Tbsp. fresh rosemary, chopped
2 tsp. sea salt
1 tsp. cracked pepper
8 (4 oz.) rib lamb chops

Directions:
Directions:

Whisk together first six ingredients. Place chops in a glass baking dish. Pour marinade over chops, cover and refrigerate two hours. Bring to room temperature before grilling. Heat grill to medium high or a pan over medium-high heat. Grill lamb chops two to three minutes per side to medium rare (120 degrees). Remove from grill and let rest three to five minutes before serving. Serves 4.
