1/4 C. olive oil
3 cloves garlic, minced
2 Tbsp. chopped fresh rosemary
2 tsp. salt
1/2 tsp. pepper
4 veal chops, 1-inch thick
Salad:
4 C. arugula, trimmed
1 C. cherry tomatoes, halved
1 Tbsp. lemon juice
1/4 tsp. salt
3 Tbsp. olive oil

Directions:
Directions:
In a large shallow dish, combine olive oil with garlic, rosemary, salt and pepper. Add chops and coat well. Marinate 10 minutes or overnight in the refrigerator. Grill the chops on hot grill 2 minutes per side. Reduce heat to medium and continue cooking about 6 minutes per side (145 degrees). Meat should be pink. Toss arugula with cherry tomatoes, lemon juice, salt, pepper and oil. Serve salad on top of chops. Serves 4.
