1/2 C. olive oil
1/4 C. fresh lemon juice
3 cloves garlic, minced
1 1/2 tsp. dried oregano
Salt and pepper
2 1/4 lbs. skinless cod fillets, cut into serving pieces

Directions:
Directions:
In a large shallow plastic container, combine oil, lemon juice, garlic, oregano, salt and pepper. Add the cod and seal carefully. Gently turn the container to coat fish evenly. Marinate at room temperature for 30 minutes or refrigerate up to 3 days. Preheat grill with a lightly oiled rack set 4 to 6 inches from heat. Remove fish from marinade, let excess marinade drip off and set the fish on the grill rack. Cook, basting occasionally with the marinade, until the fish is just firm to the tough and opaque throughout, 8 to 10 minutes; turn the fish once. Serve immediately. Makes 6 servings.
