5 LB BAG OF GOLD YUKON POTATOES
4 BAGS OF ITALIAN CHEESES
1 LARGE RED ONION(DICED)
4 CLOVES GARLIC(DICED)
2 LARGE PORTABELLA MUSHROOMS(DICED)
2 RED BELL PEPERS(DICED)
EXTRA VIRGIN OLIVE OIL FOR SAUTE
1/2 BOTTLE OF RED OR WHITE WINE
SALT AND PEPPER TO TASTE
4 TBSP. ITALIAN SEASONING

IN A LARGE POT BOIL THE POTATOES UNTIL FORK TENDER,THEN IN A LARGE SKILLET SAUTE SAUSAGE,ONION,GARLIC,AND BELL PEPPERS UNTIL TRANSLUCENT.ADD ITALIAN SEASONING AND SALT AND PEPPER AND WINE SIMMER UNTIL MIXTURE HAS REDUCED BY ABOUT HALF.THEN IN A LARGE CASSEROLE OR ROASTER MIX THE POTATOES,SAUSAGE MIXTURE,2 BAGS OF ITALIAN CHEESE AND MIX UNTIL WELL BLENDED,THEN TOP WITH THE OTHER 2 BAGS OF CHEESE AND PLACE IN A 350º OVEN AND BAKE FOR 40 MINUTES.UNCOVER THE DISH FOR THE LAST 8 MINUTES OR SO UNTIL THE CHEESE HAS BROWNED A LITTLE.TOP WITH FRESH BASIL AND SERVE WITH FRESH ITALIAN BREAD AND SALAD.
