Directions:FIRST IN A LARGE SKILLET (CAST IRON PREFERABLY) SAUTE ONION UNTIL TRANSLUCENT ABOUT 5 MIN THEN ADD IN GARLIC AND SAUTE FOR ANOTHER 5 MIN,THEN ADD IN MUSHROOMS AND SAUTE FOR ANOTHER 5 MIN OR SO UNTIL THEY HAVE SOFTENED.THEN POUR IN ABOUT HALF OF THE BOTTLE OF RED WINE AND SIMMER TILL THE SAUCE REDUCES BY ABOUT HALF.WHILE THE SAUCE IS REDUCING IN A LARGE POT POUR ALL OF THE CANS OF TOMATOES IN.SET STOVE TOP AT MED TEMP.ONCE SAUCE HAS REDUCED POUR THE MIXTURE IN THE POT WITH THE TOMATOES AND POU IN THE OTHER HALF OF THE RED WINE.THEN SAUTE CHICKEN UNTIL DONE AND SAUSAGE UNTIL DONE,ONCE THEY ARE DONE ADD THEM TO SAUCE MIXTURE AND REDUCE TEMP TO MED LOW AND SIMMER FOR 2-3 HRS.IN A LARGE BOWL OR CONTAINER COMBINE SAUCE MIXTURE AND COOKED PASTA, TOP WITH FRESH BASIL AND PARMESIAN CHEESE AND SERVE WITH GOOD BREAD. |
