1 large baking hen
4 sweet banana peppers - slice into strips
3 onions quartered
4 carrots cut up
6 medium potatoes
2 stalks celery cut into strips
2 large bell peppers cut up
2 Tbsp. Lea & Perrin
1/4 tsp. cayenne
1/2 tsp. salt
2 Tbsp. Cajun seasoning (Tony Chacheres)
3 cloves garlic chopped
(add any other fresh pepper sweet or hot that you can get).

Directions:
Place hen on rack in roasting pan. Put 1/2 inch water in bottom. Season with all the dry ingredients. Place the rest of the ingredients in water around the rack. Cover and bake at 350º for 2 hours. Serve chicken with sauce and veggies on the side.

One of my personal favorites. The blending of all the seasoning and peppers are yummy!! May want to serve with biscuits or rolls.
