Ingredients:
Ingredients:
2 pounds pork roast
3 cans Coke (substitute Dr. Pepper)
1/4 cup brown sugar
dash garlic salt
1/4 cup water
1 can sliced green chilies (optional)
1 small can red enchilada sauce
1 cup brown sugar

Directions:
Directions:
Put the pork in a heavy duty ziploc back to marinade. Mix about a can and a half of coke and 1/4 cup brown sugar. Add to pork roast and marinade for a few hours or overnight. Drain marinade and place pork in crock pot. Mix 1/2 can coke, water, and garlic salt, add to crock pot. Cook on low for 6-8 hours. Remove pork from crock pot and drain any liquid left in the pot. Shred pork (those with a Bosch or Kitchen Aid mixer with wire whisks can mix pork on speek 1 for 15-20 seconds, it will be perfectly shredded!) Add back to crock pot. Mix coke, chilies, enchilada sauce, and remaining brown sugar. Pour sauce in crock pot and cook on low for about 2 hours.
