4 cup green tomatoes
8 cup red tomatoes
5 garlic cloves
1 cup onion
5 jalapeno peppers (half with seeds for medium, or more for hot)
2 cup green peppers
2 tsp cumin
3 tsp salt
1 cup cider vinegar
3/4 cup sugar (reduce for not so sweet)

Blanch red tomatoes. Boil water, put tomatoes in boiling water for 1 minute. Fill sink with ice water. Scoop tomatoes out and into ice water. Skin red tomatoes and chop. Strain excess juice before cooking. Chop and combine the rest of the ingredients. Bring to simmer on medium high. Turn down to medium low and simmer for 3-4 hours until the right consistency. Put in hot jars. Hint: heat bottles in oven at 200 degrees to keep hot after washing in dishwasher. Wipe top before sealing lid on.
