1 cup shredded carrot
1 cup shredded apple
1 cup brown sugar
1 cup flour
2 cup raisins (optional)
1 tsp cinnamon
1 tsp nutmeg
3/4 tsp salt
1 tsp baking soda
1/2 cup shortening or butter
2 cups walnuts (optional)
1 tsp vanilla

Hard Sauce
1/2 cup butter
1 1/2 cup powdered sugar
1 tsp vanilla extract

Vanilla Sauce
1 cup sugar
1 cup boiling water
1 tsp vanilla extract
1 tbsp cornstarch
2 tbsl butter
dash salt

Directions:
Directions:
Mix all ingredients. Pour in 1 gallon can, cover and set in pan of soft boiling water. Steam for 2 1/2 hours or until firm in center and toothpick comes clean. Top with hard sauce and vanilla sauce. For Hard Sauce - Cream butter and powdered sugar until light and fluffy. Add vanilla. Chill. For Vanilla Sauce - In small pan mix sugar and cornstarch. Stir in boiling water. Simmer for 5 minutes. Stir in butter and vanilla. Add salt.
