6 cups sifted flour
1/4 lb melted butter
1/2 cup milk
3 whole eggs
1/2 pint sour cream
1 tsp. salt

Sift flour and salt into a bowl, Add butter, milk, eggs and sour cream. Mix to a soft dough easy to handle
Knead on board a few minutes. Divide Dough into halves and roll thin.Cut circles with a large biscuit cutter. Place a small spoonful of filling a little to one side on each round of dough.Moisten edges with water, fold over and press firmly together. Be sure that the pierogi are well sealed.
Drop Pierogi into salted boiling water. Cook gently for 3 to 5 minutes. Lift out carefully with a slotted spoon
Cheese Filling:
1 lb. farmer cheese or cottage cheese
1 tablespoon sugar
2 eggs
Mix well. Proceed as above
Sauerkraut filling:
1 2lb, can sauerkraut
2 small cans mushrooms
2 tablespoons sour cream
1 onion chopped
Salt and pepper to taste
Saute onion in a little butter, Add mushrooms and saute 5 minutes. Add sauerkraut; mix well, season. Add sour cream. Fill pierogi as above.

This recipe was taken from the October 1974 Buffalo Evening News article of Polish cooking. It takes a little time but the outcome is worth it.
